Courgettes are a great vegetable to grow. Usually we end up with a massive glut of courgettes that need eating up. As well as our favorite Courgette and Parmesan Tart we often make these delicious fritters.
Courgette Fritter Ingredients
- 2 grated courgettes/zucchini
- 2 grated carrots
- 3 chopped spring onions
- 1 handful of chopped parsley or coriander
- 100g of feta cheese
- 2 tablespoons of self raising flour
- 1/4 teaspoon of turmeric
- 1/2 teaspoon of ground cumin
- 2 eggs
- 1 fresh chilli
- 1 teaspoon of salt
Method
The first job is to remove the excess water from the grated courgette. Place the grated courgette in a bowl and add 1 teaspoon of salt before mixing and allowing to rest for 10 minutes. Squeeze the courgette in a colander, forcing the excess water out.
Next mix the rest of the ingredients in a large bowl to form a thick paste/batter. Heat a large flat pan and add some olive oil. Using a large spoon carefully place a dollop of batter into the pan and gently squash it down with the back of the spoon.
The key too cooking them is to leave them for 2-3 minutes until golden brown on one side before turning them. Depending on the size of your pan you’ll probably need to cook them in batches. Once cooked remove from the pan and set aside on kitchen paper to remove the excess oil while you cook the remainder.
How big are the courgettes and carrots (approximately how much when grated)?

I wouldn’t worry to much about weighing out the ingredients. The recipe is quite forgiving. All I would say is if you’re using particularly large courgettes then maybe add an extra egg if the mixture looks very dry.
