These little paneer balls make a truly wonderful starter. Spicy, juicy and full of flavor they are one of the true delights of authentic Indian cuisine.
Bhukhara Kofta Ingredients
1/2kg of Paneer
50g Corn Flour
50g Plain Flour
3 Green chillies
1 knob of Ginger
Salt
Small handful of Cashew nuts
Small handful of Almonds
Small handful of Pistachio nuts
Pinch of Saffron
100g of Bread crumbs
1 teaspoon of Cardamom powder
Method
First grate the paneer and mix with the two types of flour, cardamom and salt. Finely chop the ginger, chilli and add to the mix.
Next crumble the nuts and add to the paneer mix along with the saffron and mix together.
Roll the mixture into small balls (add a tiny bit of water if the mixture is too dry) and roll them in the bread crumbs until coated.
Fry them in hot oil until golden brown, draining on kitchen paper before serving hot accompanied with a mint chutney.

Made these as a starter for our indian meal the other night accompanied by mint and coriander chutney andI can highly recommend both recipes as they were simple to make and everyone thought them delicious.
